Toddler Meal Recipe - Easy Turkey And Mushroom Chowmein Noodles

I have a very fussy eater! Let me just put it out there first. Lucinda is very particular about the taste and especially the texture of her food - she definitely got that from her dad! There are days I struggle to get her to eat the food I cooked for her but there is one meal she definitely would not refuse and that is the turkey and mushroom chowmein / noodles. I thought I'd share with the mums out there who is looking for meal ideas for your little ones, hopefully you'll find it helpful. 


Garlic: 1 or 2 cloves, chopped
1 Spring onion (as it tastes nice and cooks faster than onion)
Sunflower oil: 2 tbsp
Light soy sauce: 1/2 tbsp
1/4 Chicken stock cube
Mushrooms: 6, sliced
Minced Turkey Breast
Egg noodles: 1/2 packet, ready cooked
Sesame Oil


Heat the pan, when the pan is hot, add the sunflower oil. 
Add the garlic and spring onion and let it cook for half a minute. 
Add the minced turkey breast and cook for a few minutes. 
Add the sliced mushrooms and stir together. 
While it's cooking, dissolve the chicken cube in half a cup of hot water and add it to the pan.
Add the egg noodles to the pan and stir gently and continuously.
You can add a little bit of light soy sauce if you like. 
Noodles should be cooked after 3 or 4 minutes.
I like to add a bit of sesame oil to finish it up, it just brings out more flavour to the dish. 

PS. My toddler loves mushrooms and it goes perfectly with chicken,  but feel free to add any vegetable of your choice. You can swap the turkey to chicken if you like but my toddler doesn't like chicken so I use minced turkey breast so she can't pick it out. No salt is needed as the stock cube has already got salt. I normally cook this dish in a large portion so all three of us can enjoy it as a meal.
