Cooking Diary One - Chinese Style Spare Ribs

Today I am sharing with you a special recipe I learnt from my mother Chinese Style Spare Ribs.


Spare ribs
Soy source
Cooking wine
Shitake mushrooms (optional)
Spring onion

1. Firstly you will need two boxes of spare ribs. I got mine from Tesco for about £ 3.50 each. Wash them first.

2. Pour the boiled water to the pot, add the ribs.Boil it for 5 minutes then drain the water and empty the pot.

3. Place the pot to the cooker with high heat, add 5 tea spoons of oil (I used olive oil). Add 3 tea spoons of sugar (I used brown sugar here but it could be any sugar). 

4. When the sugar has melted, add a couple slices of ginger and 2 cloves of chopped garlic. Add the spare ribs shortly and turn them around.The sugar can easily burn the ribs, so be careful. Add soy source - be generous as it is the key ingredient.

5. Add boiled water and leave it boil in high heet for 10 minutes before turning the heat down. 

6. Slow cook for 50 minutes (place the lid on top when slow cooking). You can add some mushroom if you like. Just before it finishes, turn the heat up and cook for 5 minutes. 

7. Add some more garlic and spring onion right before you turn off the heat.

8. And serve!
